Pumpkin Spice Chocolate Chip Cookies
Prep time 15 mins | Bake time 12 mins | Yield 36 cookies

Ingredients:

1 c canned pumpkin puree
1 c white sugar
½ c vegetable oil
1 egg
1 Tbs vanilla extract
1 c whole wheat flour
1 c white flour
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
½ tsp ground ginger
¼ tsp nutmeg
¼ tsp ground cloves
½ tsp salt
1 ½ c dark chocolate chips

Instructions:

• Preheat oven to 350°F.
• In large bowl combine pumpkin puree, sugar, oil, egg and vanilla. Stir until well combined.
• In separate bowl combine flours, baking powder, baking soda, spices, and salt.
• Add dry ingredients to pumpkin mixture and stir until well combined.
• Add chocolate chips to dough and fold in until well combined.
• Drop tablespoon-sized scoops of cookie dough onto greased cookie sheet. Bake for 10-12 minutes, or until lightly browned and firm.

Nutrition: (per 1 cookie) 105 calories, 5 g total fat, 1.5 g saturated fat, 87 mg sodium, 14 g carb, 1 g fiber, 1 g protein.
