Strawberry Basil Balsamic Vinaigrette

Prep Time: 10 mins Cook Time: 0 mins Serves: 16

Ingredients:
1 ½ cups fresh strawberries, washed, hulled, and halved
¼ cup fresh basil
½ cup olive oil
¼ cup balsamic vinegar
2 cloves garlic, minced
1 Tbs shallot, minced
1 lemon, juiced
1 tsp honey (optional)
1 tsp Dijon mustard (optional)
¼ tsp Kosher salt
1/8 tsp black pepper

Directions:
Wash and dry the strawberries and basil.
Add all ingredients to a food processor and blend until smooth.
Add salt, pepper, honey +/- Dijon mustard until desired flavor is achieved.
Serve over salad and enjoy!

Tips:
This dressing pairs great with any leafy greens such as spinach, arugula, or spring mix, a creamy cheese such as feta, goat, or burrata. Add a nutty crunch with walnuts, pecans, or sunflower seeds.
Top your salad with a grilled protein of your choosing such as chicken, pork, or salmon for a light summer meal.
Substitute in any berries of your choice, raspberries, blackberries, or blueberries would all taste great in this fruity dressing.
Use garlic powder (2 tsp) if fresh garlic not available. Try minced onion or onion powder if shallot not available.
Use leftovers as a marinade for chicken or pork. Or store in airtight container in the fridge for up to one week.
